
Zucchini – different versions
What do you usually do with zucchini? Today, I tried something new:
Zucchini “noodles” and Zucchini salad topping
Let’s start with the noodles. I took two zucchinis and sliced them very thinly.
After that, I cut the slices into strings and put them in a pan to fry them. This softens the zucchini and you can eat it with marinara or whatever you wish for.
Now for the salad topping:
The rest of the zucchini was finely chopped, put in a pan with chopped mushrooms, curry masala, salt and a bit soy sauce.
Let cool and toss over a green salad.
Cool idea…. lots of room for versatility too. I am thinking a nice mediterranean style salad dressing would be great too
