Tom Kha Gai – Thai chicken coconut soup

All you need is
2-4 chicken breasts, chopped
1 zucchini, diced
1 yellow bell pepper, diced
3-4 tomatoes (peeled), diced
4-5 brown mushrooms, diced
2 carrots, diced
1 onion, finely chopped
1 garlic
1 chili
2 cans coconut milk
Juice of 1-2 limes
2 thin slices of ginger

Additionally, if you like to: rice, cilantro, fish sauce (I don’t like fish sauce, so I left it away)

Chop everything, fry the chicken, add the veggies, pour in the coconut milk, let simmer for 20 minutes.
