14 days raw foods detox challenge – day 2

Today is all about “EAT BY COLOR – red”.
My breakfast was a smoothie made of raspberries, strawberries, spinach, matcha powder, almond milk and pomegranate (picture is bad, sorry!).

Since we got up late today and after breakfast headed to the gym straight away, lunch was more or less hydrating and nibbling some nuts and my raw capsicum-cucumber-salad with onions, lemon juice, salt, chili and pepper.

Now for dinner, still going by the color scheme red:
Salad with red bell pepper, tomatoes and “guacamole” as topping. For the salad I used
Red chard
Bulls blood
Mache
Rocket
1 red bell pepper
1 tomato
Seeds (pumpkin, sunflower, pine)

For the guacamole I used
1/2 avocado (leftover from last night’s dinner)
1 tomato
1/4 onion
Leek
Red bell pepper
Chili
Juice of 1/2 lemon
Pine seeds
Salt, pepper

Put it into a blender and tadaa, there is the improvised leftovers guacamole.

Since I usually also crave something sweet, I cut a big red apple in slices and added some green seedless grapes to my plate.
This way I even had a 2-course dinner.

Now I still had some cucumber from last night and the rest of the lemon. Since I don’t like throwing food away, I made lemon and cucumber infused water. Things are seriously creative here right now :-)
