
Hot salsa
Major food prepping day! Woohoo!
I made a hot salsa, a guacamole, prepared for making hummus tomorrow and also made my bf a base for his burritos.
I’ll start with the recipe of the hot salsa.
Ingredients:
cherry tomatoes
1/2 cucumber
1/2 onion
2 green onions
juice of 1/2 lemon
fresh parsley
fresh marjoram
roasted red pepper
1 sliced jalapeño
1 chilli
1 small carrot
1 stick celery
some dried tomatoes
coarse sea salt
I roughly cut everything smaller and put it in a food processor. I had to make two batches, though…
After having pulsed everything together, I just tasted and decided that no more spices are needed. Filled all in a jar and put in the fridge. Should be ok for the next couple of days.
