Red lentil curry

Red lentil curry

I love a good curry! While shopping, I found red lentils and took them with because, attention!, I thought they looked pretty…
What to do with them now? I looked up some recipes and found some curries that contain red lentils. Now this is my version of a vegan curry:

200g red lentils (dried)
2 sticks celery
1/2 red onion
2 sticks green onions
1 orange bell pepper
2 carrots
juice of 1 lime
2 slices of ginger, diced finely
1/2 can coconut milk
curry powder
coarse sea salt
1 chili
1 tsp coconut oil
150g wild rice

Wash the lentils, let dry. Chop all veggies, ginger, chili and put in a pan with the coconut oil.



Fry everything for a little bit, then add the lentils. Let all cook for 2-3 minutes, add coconut milk and all the spices you desire. I added curry (madras, tandoori), salt and some herbs I thought would fit in well.
Meanwhile cook the wild rice with some curry powder and salt.
Stir the lentils and veggies well and cook on low for as long as the rice cooks (around 20 minutes).
Serve curry on wild rice.
