
Roasted chickpeas hummus
Sorry for the lack of posts lately, but we are about to move into a bigger apartment and are therefore busy packing and remodeling. If we don’t do that, we are out shopping furniture… Busy days right now!
I actually feed on natural “fast food”, such as freshly cut fruits and veggies. I barely have time to cook!
I decided I needed hummus and of course, I didn’t have time to prepare chickpeas, so I used canned ones. I confess!
This hummus was a blast!
Ingredients:
1 can chickpeas, rinsed and dried
roasted red pepper, rosemary, thyme, salt, chili, garlic, oregano
Ingredients later on:
juice of 1/2 lemon
2 tbsp roasted sesame oil
3 dried tomatoes
fresh parsley
5 tbsp water
Mix the spices, marinate the chickpeas. After that, set them on a baking sheet and let them roast in the oven for around 20 minutes at ~200 deg Celsius.
Set some roasted chickpeas aside and use them as snacks!
Put the rest in a food processor, add the lemon juice, tomatoes, parsley, sesame oil and water and pulse until the desired consistency. Add water if too dry.
I ate this hummus to roasted sweet potatoes and carrots. Yummy!
