Red cabbage “German style”

Woohoo, excitement around here! I cooked red cabbage for the first time today and managed to cook it completely vegan, gluten free, dairy free and it tastes great!
The original version, as prepared in Germany, calls for wheat flour, lots of sugar, vinegar, lard,… It’s a hearty side dish, usually eaten with potatoe dumplings and pork.
Well, I don’t do that.

These are my ingredients:
1 head red cabbage, sliced
1 medium apple
1 medium onion
4 juniper berries
2 bay leafs
1 tbsp buckwheat flour
2 tbsp lemon juice
2 tbsp balsamic vinegar
3-4 cloves
2 tbsp apple juice
1 tbsp coconut oil
1/2 cup water
2 tsp brown cane sugar
salt, pepper, sweetener (agave or stevia, your choice)

Fry onions and apples, add rest of the ingredients, cook 20 minutes. Add some more spices and flour to season and thicken. Done!
