Bruschetta

Bruschetta

Now for a perfect summer dish, light and tasty. Originally a dish that the poor people in Italy ate, it made its way through the world. Well deserved! Sometimes, the simple things are the best.

Ingredients:
6 very ripe medium sized tomatoes
1 medium sized yellow onion
1 shallot
1 green onion
4 cloves fresh garlic
a small bunch of chives
rosemary, thyme
coarse sea salt
fresh cracked black pepper
fresh baguette bread or ciabatta
2 tsp evoo

Wash everything and finely dice all ingredients, except one clove of garlic, the bread and the oil. I have a small blender that “dices”, so that’s a time saver for me.
Put everything in a bowl and mix well.
Slice the bread and toast it with some of the olive oil. Rub it with the leftover garlic clove when it is still hot, set the bruschetta mix on it, serve.
Easy and so sooo good!
