Vegan Caesar’s salad
My boyfriend doesn’t like eating much salad but when it comes to caesar’s dressing, he’s all in. I told him what’s all in the original dressing (like anchovies, etc.) and he was surprised, since he doesn’t eat or like much fish. I’ve never liked any kind of seafood, so I also stopped eating that dressing as soon as I found that out.
Now I’m eating vegan since a couple of months and we decided to try a vegan version of this salad…
I started researching on the internet for ideas. Gee, people, vegan food doesn’t need any crap like nutritional yeast! Stop eating that!
Now here is my, and bf approved, vegan version of Caesar’s dressing.
1 ripe avocado
1 handful soaked cashews (soak for 2 hours in filtered water)
3 tsp sweet mustard (Dijon)
1 tsp mustard
5 tbsp filtered water
juice of 1/2 lemon
juice of 1/2 lime
2 cloves garlic (if you like it stronger, add more!)
coarse sea salt and fresh cracked black pepper
Blend everything in a food processor until smooth. I added some more water and salt to intensify the aroma.
As salad we used a medium sized iceberg lettuce, cut in small pieces. Put everything in a bowl, set the lid on and shook well – enjoy!!!
1.) Roasted croutons – rub fresh garlic on fresh toasted bread, cut it up in small pieces and roast it in a pan (without oil!).
