
Watermelon salad
This really Is a great summer food! Refreshing, juicy, salty, sweet, all in one!
Ingredients:
1 chilled watermelon
6 green onions
2 shallots
4 big leafs basil
1 handful fresh parsley and chives
juice of 1/2 lemon
6 big leafs mint
20 green olives, cut in half
sea salt, black pepper
optional: tofu crumbles
Chop everything to your desired size, put in a bowl, mix and let sit in the fridge for 20 minutes. Enjoy!
