Walnut apricot bliss balls

As promised, here are last night’s walnut apricot bliss balls:
2 handful walnuts
1 handful dates
1 handful dried apricots
2 tbsp shredded coconut
1 tbsp real cocoa powder
1 tsp vanilla bean
2 cups filtered water
shredded almonds

Soak the walnuts, dates and apricots in the filtered water for about 30 minutes.
After soaking, drain them but keep about 4 tbsp of the soaking water. Put the soaked ingredients in a food processor along with some of the soaking water (add more if needed). Start pulsing and slowly add the rest of the ingredients except for the shredded almonds.
Since I like a little crunch, I only pulsed the “dough” roughly.
When done, form little balls and roll them in the shredded almonds. Put in an airtight container in the fridge. Should last for a week if you don’t eat them up right away.
If you’re more disciplined than I am, this recipe should make about 25 balls.
