
Berry crumble
I made a berry crumble with vanilla cream today and it smells so good at home right now.
It’s completely vegan and here is my recipe:
For the crumbles:
1.5 cups buckwheat flour
4 tbsp coconut oil
1.5 cups shredded oats
1/3 cup shredded walnuts
1 tsp grated vanilla bean
3 tbsp maple syrup
2 tbsp agave syrup
1 tsp cinnamon
For the berries:
mixed berries, any kind you like, enough to be spread evenly in your baking dish
I used blueberries, blackberries, raspberries and rhubarb
2 tsp brown sugar
1 tsp stevia
For the cream:
2 cups vegetable cream
2 tsp grated vanilla bean
2 tbsp maple syrup
Spread the berries in your baking dish, mix stevia and brown sugar and pour it evenly over the berries. Set aside.
Put all ingredients for crumbles in a bowl and knead until you have crumbles.
Cover the berries with the crumbles and put in the oven at 200 deg C for 20 minutes.
Meanwhile mix the ingredients for the cream and whip everything until your desired consistency.
Take the crumble out of the oven and serve hot with the whipped cream on the side.
