
Banana bread
This recipe comes from a very inspiring young lady, Erika, chef at “Open New Doors” in Sweden.
I scrolled through Erika’s Instagram feed and found this beautiful banana bread recipe which I have slightly adapted since I didn’t have all ingredients at home.
Ingredients:
4 very ripe bananas
200g buckwheat flour
150g buckwheat, coarsely shredded
1 Apple
100g walnuts, coarsely shredded
2 tsp cinnamon
1/2 tsp vanilla bean
2 tsp baking powder
pinch of sea salt
coconut oil
Gadgets:
blender
bowl
grater
loaf pan
Instructions:
Put the bananas in the blender and mix until smooth.
Grate the apple, shred buckwheat and walnuts.
Heat the oven on 200 degrees Celsius.
Mix the puréed bananas with the grated apple, spices and baking powder. Add the walnuts, buckwheat und buckwheat flour. Stir well and pour the mix into the loaf pan which has been greased with coconut oil before.
Bake the loaf for 30 minutes on 200 degrees Celsius. Take out of the oven, let cool and enjoy!
