
Cauliflower Alfredo sauce
Have you ever tried this healthier and vegan version of alfredo sauce? The original calls for loads of butter, cream and is so fatty and unhealthy!
I tried this version a couple of days ago. Although it probably won’t become a favorite in our house, I want to let you know the how-to.
Ingredients:
- 1 medium sized cauliflower head
- 1 yellow onion
- 5-8 cloves garlic
- 300ml plant milk of choice, I used oat milk
- salt, pepper to taste
- 1 tsp coconut oil (to fry onions and garlic)
- optional: nutmeg, basil
Cut the cauliflower into florettes and steam for 5-7 minutes. Meanwhile fry the chopped onion and garlic until the onions are transparent.
Put all ingredients into a blender and blend until smooth. Pour the mix into a pan and let simmer while you cook your pasta. Pour the alfredo over the pasta and serve.
